Perfect Pasta

Must be the weather….  Rain – Rain – and more – Rain.  I found an article by Claire Saffitz in the recent edition of Bon Appetit and could not find it online, so scanned it (thus a tad crooked) and share it here.  I think it makes some good points.

At restaurants, those noodles get coated in a silky, glossy sauce—the secret is an emulsion of fat, pasta water, and cheese.

Here are the 5 key steps to replicating that at home.

There’s something about pasta at a restaurant that just seems different. The sauce clings to each noodle perfectly, as if separation were physically impossible. That alfredo or carbonara is so sublimely smooth that it could never be replicated at home, right? Wrong. Here’s how to make pasta at home that is every bit as saucy and glossy as it is at your neighborhood trattoria. Get out your Dutch oven (or sauce pan or large skillet), and follow these 5 easy steps to at-home pasta perfection.

1. Start in a Dutch Oven

A big one, so you avoid half-cooked pasta caking onto your stovetop, which can happen easily when saucing with a skillet. Higher sides mean the pasta won’t flip out as you’re tossing—and there’s going to be a lot of tossing.

2. Build Your Flavors

Pour a few tablespoons of olive oil into the Dutch oven (enough to cover the bottom) and heat over medium. Add some aromatics like garlic or shallots, then cook mushrooms or other veg in the oil until they’re tender.

3. Drop the Pasta

In a pot of very salty boiling water, cook noodles until they’re several minutes shy of al dente. Transfer them to whatever you’ve got in the Dutch oven, along with a ladleful of pasta water. The noodles should swim, and the liquid should be bubbling.

4. Marry the Noodles and Sauce

Toss, toss, toss as the pasta finishes cooking. Then add a bit more pasta water. Toss some more, then slowly stir in some finely grated hard cheese—Parmesan, Pecorino, Grana Padano—little by little so it melts evenly and completely.

5. Finish It Right

Keep tossing until each strand or shape is coated and no bits of cheese remain. Remove from heat, stir in a spoonful of butter, and top with more cheese and some crispy bits (prosciutto FTW), then serve directly out of the Dutch oven at the table.

Here is another easy and fairly fast recipe that I made the other day.  I just put my jars in the dishwasher at the highest temperature, rather than do the whole water bath described by America’s Test Kitchen.  The cucumbers are from my garden and the lone red bell pepper is the only one that lived in my garden.  Happy to put the two together in the same recipe. My husband loves these on hamburgers or as my youngest son called them: “Hammaburgers”.  I like them just plain as a side dish or on a slice of delicious bread.

Bread-and-Butter Pickles

WHY THIS RECIPE WORKS

We wanted a bread-and-butter pickle with a crisp texture and a balance of sweet and sour—perfect for adding to a char-grilled burger. Most recipes combine cucumbers and onions in a spiced, syrupy brine; we cut back on the sugar and added red bell pepper for its fresh flavor and color. Cucumbers can lose their crunch when processed in a boiling water bath; we found that combining several crisping techniques gave us the best results. We tossed our sliced vegetables in salt to draw out excess water.

We added a small amount of Ball Pickle Crisp, which helps keep the natural pectin from breaking down, resulting in firmer pickles. Finally, rather than processing in a boiling-water bath, we employed a technique known as low-temperature pasteurization, which involved maintaining our pickles in a hot-water bath at a temperature of 180 to 185 degrees Fahrenheit for 30 minutes—in this temperature range microorganisms are destroyed and pectin remains largely intact.

INGREDIENTS

2 pounds pickling cucumbers, ends trimmed, sliced 1/4 inch thick
1 onion, quartered and sliced thin
1 red bell pepper, stemmed, seeded, and cut into 1 1/2‑inch matchsticks
2 tablespoons canning and pickling salt
3 cups apple cider vinegar
2 cups sugar
1 cup water
1 tablespoon yellow mustard seeds
¾ teaspoon ground turmeric
½ teaspoon celery seeds
¼ teaspoon ground cloves
½ teaspoon Ball Pickle Crisp
FOUR 1-PINT JARS

1. Toss cucumbers, onion, and bell pepper with salt in large bowl and refrigerate for 3 hours. Drain vegetables in colander (do not rinse), then pat dry with paper towels.

2. Meanwhile, set canning rack in large pot, place four 1‑pint jars in rack, and add water to cover by 1 inch. Bring to simmer over medium high heat, then turn off heat and cover to keep hot.

3. Bring vinegar, sugar, water, mustard seeds, turmeric, celery seeds, and cloves to boil in large saucepan over medium-high heat; cover and remove from heat.

4. Place dish towel flat on counter. Using jar lifter, remove jars from pot, draining water back into pot. Place jars upside down on towel and let dry for 1 minute. Add 1/8 teaspoon Pickle Crisp to each hot jar, then pack tightly with vegetables.

5. Return brine to brief boil. Using funnel and ladle, pour hot brine over cucumbers to cover, distributing spices evenly leaving 1/2 inch headspace. Slide wooden skewer along inside of jar, pressing slightly on vegetables to remove air bubbles, and add extra brine as needed. 6a. For short-term storage: Let jars cool to room temperature, cover with lids, and refrigerate for 1 day before serving. (Pickles can be refrigerated for up to 3 months; flavor will continue to mature over time.) 6b. For long-term storage: While jars are warm, wipe rims clean, add lids, and screw on rings until fingertip-tight; do not overtighten. Before processing jars, heat water in canning pot to temperature between 120 and 140 degrees. Lower jars into water, bring water to 180 to 185 degrees, then cook for 30 minutes, adjusting heat as needed to maintain water between 180 and 185 degrees. Remove jars from pot and let cool for 24 hours. Remove rings, check seal, and clean rims. (Sealed jars can be stored for up to 1 year.)

Pianos are not “IN” anymore

In my attempt to get rid of everything now, instead of waiting mode, I am finding the things I treasure are not even worth anywhere what I thought they might be.  I have a beautiful 1907 Mahogany Etsey grand piano with ivory keys and a new soundboard.  I have not played it much since marrying six years ago, as my husband is much better than I am.  I am a little embarrassed to play if he is around.  I took lessons for several years, but my first love of music was the clarinet, so my left hand does not mind as well as my right. Trying to work them together doing different things with each hand is just not intuitive to me.

Growing up on a farm in Northern California, we were not poor, we were dirt poor.  I never realized just how poor we were till I was an adult. My father worked two jobs and my mother was an elementary teacher.  We lived in a house that had been passed down from my great grandmother.  It was a very old house with no central heat, a cesspool behind the garage and the only bathroom where remodeling was started, but was never finished, so we had plywood countertops for years. The kitchen counter was rotted linoleum by the sink, but we had many wonderful family meals in the kitchen on our 1950’s now retro table. My mother played the piano, but my family could not afford lessons for me, so I did not have the opportunity to learn.  My mother played for church and school as my grandparents had an old upright piano where she learned.  I often wondered why I was not allowed to take lessons and play their piano, as they lived next door.

When I married the father of my three sons he supported my wanting to learn the piano and bought me a very nice upright piano, where two of my sons took lessons in Del Mar. We left the piano behind moving to the Northwest, with the promise when our gorgeous new home was complete we would buy a new grand piano.  The house was designed with that in mind. For my fortieth birthday, and the year Fred died he bought me a beautiful black concert grand piano where all three boys and myself took private lessons. When I sold that house, as after he died, it was just too big (7000 square feet) I designed the next house with a separate area for that beautiful piano. It had been used by the Seattle Opera, so it was signed by the conductor of the orchestra and had “Lionel Hampton” casters.  We had to hire a crane to get the piano to the second story conservatory for the piano.  In hind sight it was not the best place for the piano, as it was in a very private space away from the main area of the house.  I did practice every day for the years that we lived there; but since I had to go back to work full time to support my sons and I no longer took lessons.  By then they were teenagers and could not be bothered with  piano lessons.

When my taxes grew and grew and grew and I decided it was time to make a change, I had to hire a bigger crane to move the piano.  At the time I was not sure where I was going to move, so I put the piano in storage. I knew I would most likely never have a house with enough space for my beautiful fortieth birthday gift, so when I moved to my beach house I traded it in for the one I have today.

When I called the piano store where I purchased the Etsey grand, the owner informed me he had closed the store and works out of his garage. He told me pianos no longer sell well. He suggested I look on Ebay and see how many thousand pianos were offered for sale. It is sad that so many of the beautiful elegantly crafted and perfectly designed objects that were loved in the past are dismissed in today’s world. Not only are they unwanted, but if you happen to have them, many in the younger generation do not understand the significance they might have had in your life and think it is sill that you have not sold them for the “money”?

Now I guess I am going to keep it and when all the company of summer leaves, I may find somewhere to take piano lessons once again, as it is so relaxing. Maybe when my day comes, I will just donate all my beautiful things to a good cause, as I truly to do not want to burden my family with the bother of selling them.  Ha Ha

 

 

Pianos are not “IN” anymore

My husband said he loves Blackberry Pie, so yesterday I tried a sort of new crust and added blackberries to the inside.  I used Vodka in place of half of the water for the pie crust, as it is supposed to make the crust lighter, as it evaporates and your crust will not have a chance of being soggy.

Why this works: We wondered how to make pie dough that is tender, flavorful, and—most important—consistent. Since water bonds with flour to form gluten, too much of it makes a crust tough. But rolling out dry dough is difficult. For a pie dough recipe that baked up tender and flaky and rolled out easily every time, we found a magic ingredient: vodka. Using vodka, which is just 60 percent water, gave us an easy-to-roll crust recipe with less gluten and no alcohol flavor, since the alcohol vaporizes in the oven.

FOOL PROOF PIE CRUST

Ingredients

  • 2 ½ cups unbleached all-purpose flour, (12 1/2 ounces)
  • teaspoon table salt
  • tablespoons sugar
  • 12 tablespoons cold unsalted butter, (1 1/2 sticks), cut into 1/4-inch slices
  • ½ cup chilled solid vegetable shortening, cut into 4 pieces
  • ¼ cup vodka, cold
  • ¼ cup cold water

Instructions

FOR ONE 9-INCH DOUBLE-CRUST PIE

NOTE FROM THE TEST KITCHEN Vodka is essential to the texture of the crust and imparts no flavor—do not substitute extra water. The alcohol is key to our recipe; if you don’t have vodka on hand, you can use another 80 proof liquor. This dough will be moister and more supple than most standard pie doughs and will require more flour to roll out (1/4 cup must be used to prevent the dough from sticking to the counter).
  1. 1. Process 1 1/2 cups flour, salt, and sugar in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogenous dough just starts to collect in uneven clumps, about 15 seconds (dough will resemble cottage cheese curds and there should be no uncoated flour). Scrape bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl.

    • 2. Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Divide dough into two even balls and flatten each into 4-inch disk. Wrap each in plastic wrap and refrigerate at least 45 minutes or up to 2 days.

      I roll out between two floured pieces of parchment.  This is a very tender crust, so not one for a beginner.

      Blackberry Pie

      Ingredients

      • 4 cups fresh blackberries
      • 1/2 cup white sugar
      • 1/2 cup all-purpose flour
      • 1 recipe pastry for a 9 inch double crust pie
      • 2 tablespoons milk
      • 1/4 cup white sugar

      Directions

      1. Preheat oven to 425 degrees F (220 degrees C).
      2. Combine 3 1/2 cups berries with the sugar and flour. Spoon the mixture into an unbaked pie shell. Spread the remaining 1/2 cup berries on top of the sweetened berries, and cover with the top crust. Seal and crimp the edges, and cut vents in the top crust for steam to escape.
      3. Brush the top crust with milk, and sprinkle with 1/4 cup sugar.
      4. Bake in the preheated oven for 15 minutes. Reduce the temperature of the oven to 375 degrees F (190 degrees C), and bake for an additional 20 to 25 minutes, or until the filling is bubbly and the crust is golden brown. Cool on wire rack.

      Using this recipe, the bottom of my pie was a little too soggy for my taste.  I would put a pizza stone in the oven to reflect more heat on the bottom.  Put it on the rack below the pie.

      … And since I believe in eating dessert first here is the rib information.  I made the sauce and cooked it in a slow cooker.  I mentioned this might be great for The Fourth of July when we invite family and friends, and my sweet husband commented, why don’t you make a second one where you just pour in a bottle of BBQ sauce for my sons.  Moments like this are frustrating.

      Slow-Cooker Barbecued Sticky Ribs

      Why This Recipe Works

      In order to fit our ribs into the slow cooker for our barbecued sticky ribs recipe, we arranged the full racks of ribs standing up around the perimeter and finally spiraling in towards the center of the slow cooker, pouring the sauce over the top. Because we had left space between the ribs, they cooked evenly, and because the sauce was poured on top of the standing ribs, they slow-basted during cooking, absorbing more of the sauce’s flavors.

      • tablespoons paprika
      • tablespoons packed light brown sugar
      • tablespoon salt
      • tablespoon ground black pepper
      • ¼ teaspoon cayenne pepper
      • pounds baby back ribs, or St. Louis-style spareribs (see note)
      • cups barbecue sauce

      Instructions

      SERVES 4 TO 6

      NOTE FROM THE TEST KITCHEN Authentic baby back ribs weigh about 1 1/2 pounds per rack, while St. Louis-style spareribs weigh about 3 pounds per rack. (Note that commercially packaged “baby back” ribs are often just mislabeled St. Louis-style spareribs.) Both types of ribs, however, will work well here. You can either make your own barbecue sauce, or use your favorite store-bought brand—we like Bull’s Eye Original
      1. 1. Combine the paprika, brown sugar, salt, pepper, and cayenne in a small bowl, then rub the mixture evenly over the ribs. Transfer the ribs to the slow cooker and arrange them standing upright with the meaty side against the interior wall of slow cooker. Pour the barbecue sauce over the ribs. Cover and cook on low until the meat is tender, 4 to 5 hours.

      2. 2. Transfer the ribs to a cutting board, tent with foil, and let rest for 20 minutes. Let the cooking liquid settle for 5 minutes, then gently tilt the slow cooker and remove as much fat as possible from the surface using a large spoon. Strain the sauce through a fine-mesh strainer into a medium sauce-pan. Bring the sauce to a simmer and cook until the mixture measures 2 cups, 15 to 20 minutes.

      3. 3. Slice the ribs between the bones and toss them with the barbecue sauce. Transfer the ribs to a warmed platter and serve.

      WHY THIS RECIPE WORKS:

      Ingredients

    We found that simmering the sauce on the stovetop concentrated the flavors and thickened the sauce. A little Worcestershire sauce provided rich, savory flavor and a combination of chili powder, cayenne pepper, and hot sauce provided just enough heat to register, but not so much that it overwhelmed the other flavors.

    MAKES 3 CUPS

    This recipe was developed using relatively mild Frank’s RedHot hot sauce.

    INGREDIENTS

    INSTRUCTIONS

    1. 1. Heat oil in large saucepan over medium heat until shimmering. Add onions and cook until softened, about 5 minutes. Stir in garlic, chili powder, and cayenne and cook until fragrant, about 30 seconds.

      2. Add ketchup, molasses, vinegar, Worcestershire, mustard, and hot sauce and simmer, stirring occasionally, until sauce is thickened and reduced to 3 cups, about 30 minutes. (Sauce can be refrigerated for up to 1 week or frozen for up to 1 month.)

Simple and simply Delish!

French Onion Soup, with a little homemade Focaccia on the side for a light dinner.  I just didn’t photograph the pasta that followed and ruined the effect.

Love these little soup bowls as you can have just a little taste of soup for the first course.  I often do this when entertaining or just for the two of us at home.

When I make a simple soup, I make a lot and freeze it in Mason Jars.  (Just be sure to leave room at the top for freezing space) On nights I don’t feel like cooking.  [You know the one that you have spent all day in the garden], it is nice to know there is something simple and good in the freezer; and just add a salad and you have dinner in ten minutes.

In the summer there is always lots of lettuce growing in my garden, so that is the time of year I love salads the most.

This last month I added a herb garden in planters on my covered deck, so I can have fresh herbs at my disposal all year, without walking out in the rain to cut them. My husband installed a drip system, so I don’t even have to worry about watering them.  It is just nice!

This summer we will install a translucent wall, so they get light and we have privacy. The only disadvantage of living on the beach, is the close proximity to other houses.  These little additions make fresh cooking so simple.

New Evidence – Another Mona Lisa by de Vinci

Evidence for New Mona Lisa Mounts

What at first seemed highly improbable – even ludicrous – is now closer to becoming a reality: The evidence in favor of a second, older Mona Lisa by Leonardo is growing.
New tests and scholarly attributions are moving in favor of attributing a recently re-discovered painting to Leonardo da Vinci. Advocates of the “Isleworth Mona Lisa” claim this to be the original, painted when the sitter, Lisa del Giocondo, was in her youth.
Since the painting’s revelation in Geneva in September 2012, the Zurich-based Mona Lisa foundation has spear-headed efforts to demonstrate the painting’s authenticity (though it claims to have no financial interest in the work).
One strong piece of evidence came from a carbon-dating test performed by The Swiss Federal Institute of Technology (ETH). The test results directly refute arguments that the “Isleworth Mona Lisa” is a later, 16th-century copy of the Louvre’s painting. ETH determined that the painting was almost certainly created between 1410 and 1455 (95.4% probability), and most likely between 1425 and 1450 (68.2% probability).
A second argument was made by Professor John Asmus, a nuclear physicist who conducted four tests on the “Isleworth Mona Lisa” and the Louvre’s “Gioconda.” By digitizing the brushstrokes of both paintings, Asmus determined that they would have been painted by the same artist.

Further support has come from Italian geometrist Alfonso Rubino, who, after studying Leonardo’s “Vitruvian Man” in relation to the artist’s paintings, determined that Leonardo incorporated Vitruvian geometry into his other artwork. Rubino has studied the “Isleworth Mona Lisa” and concluded that its similar proportions and structure serve as incontrovertible evidence of Leonardo’s authorship.
The Isleworth Mona Lisa still has notable detractors in the world of art history. British Leonardo specialist Martin Kemp has argued vehemently against the painting’s acceptance, as has U.S. scholar Richard Spear.
