Blackberry Pie along with some dang tasty Ribs…

My husband said he loves Blackberry Pie, so yesterday I tried a sort of new crust and added blackberries to the inside.  I used Vodka in place of half of the water for the pie crust, as it is supposed to make the crust lighter, as it evaporates and your crust will not have a chance of being soggy.

Why this works: We wondered how to make pie dough that is tender, flavorful, and—most important—consistent. Since water bonds with flour to form gluten, too much of it makes a crust tough. But rolling out dry dough is difficult. For a pie dough recipe that baked up tender and flaky and rolled out easily every time, we found a magic ingredient: vodka. Using vodka, which is just 60 percent water, gave us an easy-to-roll crust recipe with less gluten and no alcohol flavor, since the alcohol vaporizes in the oven.

FOOL PROOF PIE CRUST

Ingredients

  • 2 ½ cups unbleached all-purpose flour, (12 1/2 ounces)
  • teaspoon table salt
  • tablespoons sugar
  • 12 tablespoons cold unsalted butter, (1 1/2 sticks), cut into 1/4-inch slices
  • ½ cup chilled solid vegetable shortening, cut into 4 pieces
  • ¼ cup vodka, cold
  • ¼ cup cold water

Instructions

FOR ONE 9-INCH DOUBLE-CRUST PIE

NOTE FROM THE TEST KITCHEN Vodka is essential to the texture of the crust and imparts no flavor—do not substitute extra water. The alcohol is key to our recipe; if you don’t have vodka on hand, you can use another 80 proof liquor. This dough will be moister and more supple than most standard pie doughs and will require more flour to roll out (1/4 cup must be used to prevent the dough from sticking to the counter).
  1. 1. Process 1 1/2 cups flour, salt, and sugar in food processor until combined, about 2 one-second pulses. Add butter and shortening and process until homogenous dough just starts to collect in uneven clumps, about 15 seconds (dough will resemble cottage cheese curds and there should be no uncoated flour). Scrape bowl with rubber spatula and redistribute dough evenly around processor blade. Add remaining cup flour and pulse until mixture is evenly distributed around bowl and mass of dough has been broken up, 4 to 6 quick pulses. Empty mixture into medium bowl.

    • 2. Sprinkle vodka and water over mixture. With rubber spatula, use folding motion to mix, pressing down on dough until dough is slightly tacky and sticks together. Divide dough into two even balls and flatten each into 4-inch disk. Wrap each in plastic wrap and refrigerate at least 45 minutes or up to 2 days.

      I roll out between two floured pieces of parchment.  This is a very tender crust, so not one for a beginner.

      Blackberry Pie

      Ingredients

      • 4 cups fresh blackberries
      • 1/2 cup white sugar
      • 1/2 cup all-purpose flour
      • 1 recipe pastry for a 9 inch double crust pie
      • 2 tablespoons milk
      • 1/4 cup white sugar

      Directions

      1. Preheat oven to 425 degrees F (220 degrees C).
      2. Combine 3 1/2 cups berries with the sugar and flour. Spoon the mixture into an unbaked pie shell. Spread the remaining 1/2 cup berries on top of the sweetened berries, and cover with the top crust. Seal and crimp the edges, and cut vents in the top crust for steam to escape.
      3. Brush the top crust with milk, and sprinkle with 1/4 cup sugar.
      4. Bake in the preheated oven for 15 minutes. Reduce the temperature of the oven to 375 degrees F (190 degrees C), and bake for an additional 20 to 25 minutes, or until the filling is bubbly and the crust is golden brown. Cool on wire rack.

      Using this recipe, the bottom of my pie was a little too soggy for my taste.  I would put a pizza stone in the oven to reflect more heat on the bottom.  Put it on the rack below the pie.

      … And since I believe in eating dessert first here is the rib information.  I made the sauce and cooked it in a slow cooker.  I mentioned this might be great for The Fourth of July when we invite family and friends, and my sweet husband commented, why don’t you make a second one where you just pour in a bottle of BBQ sauce for my sons.  Moments like this are frustrating.

      Slow-Cooker Barbecued Sticky Ribs

      Why This Recipe Works

      In order to fit our ribs into the slow cooker for our barbecued sticky ribs recipe, we arranged the full racks of ribs standing up around the perimeter and finally spiraling in towards the center of the slow cooker, pouring the sauce over the top. Because we had left space between the ribs, they cooked evenly, and because the sauce was poured on top of the standing ribs, they slow-basted during cooking, absorbing more of the sauce’s flavors.

      • tablespoons paprika
      • tablespoons packed light brown sugar
      • tablespoon salt
      • tablespoon ground black pepper
      • ¼ teaspoon cayenne pepper
      • pounds baby back ribs, or St. Louis-style spareribs (see note)
      • cups barbecue sauce

      Instructions

      SERVES 4 TO 6

      NOTE FROM THE TEST KITCHEN Authentic baby back ribs weigh about 1 1/2 pounds per rack, while St. Louis-style spareribs weigh about 3 pounds per rack. (Note that commercially packaged “baby back” ribs are often just mislabeled St. Louis-style spareribs.) Both types of ribs, however, will work well here. You can either make your own barbecue sauce, or use your favorite store-bought brand—we like Bull’s Eye Original
      1. 1. Combine the paprika, brown sugar, salt, pepper, and cayenne in a small bowl, then rub the mixture evenly over the ribs. Transfer the ribs to the slow cooker and arrange them standing upright with the meaty side against the interior wall of slow cooker. Pour the barbecue sauce over the ribs. Cover and cook on low until the meat is tender, 4 to 5 hours.

      2. 2. Transfer the ribs to a cutting board, tent with foil, and let rest for 20 minutes. Let the cooking liquid settle for 5 minutes, then gently tilt the slow cooker and remove as much fat as possible from the surface using a large spoon. Strain the sauce through a fine-mesh strainer into a medium sauce-pan. Bring the sauce to a simmer and cook until the mixture measures 2 cups, 15 to 20 minutes.

      3. 3. Slice the ribs between the bones and toss them with the barbecue sauce. Transfer the ribs to a warmed platter and serve.

      Barbecue Sauce

      WHY THIS RECIPE WORKS:

      Ingredients

    We found that simmering the sauce on the stovetop concentrated the flavors and thickened the sauce. A little Worcestershire sauce provided rich, savory flavor and a combination of chili powder, cayenne pepper, and hot sauce provided just enough heat to register, but not so much that it overwhelmed the other flavors.

    MAKES 3 CUPS

    This recipe was developed using relatively mild Frank’s RedHot hot sauce.

    INGREDIENTS

    INSTRUCTIONS

    1. 1. Heat oil in large saucepan over medium heat until shimmering. Add onions and cook until softened, about 5 minutes. Stir in garlic, chili powder, and cayenne and cook until fragrant, about 30 seconds.

      2. Add ketchup, molasses, vinegar, Worcestershire, mustard, and hot sauce and simmer, stirring occasionally, until sauce is thickened and reduced to 3 cups, about 30 minutes. (Sauce can be refrigerated for up to 1 week or frozen for up to 1 month.)

In our Divided American culture we now need to be made of steel to hold on to our beliefs in and of America.

I have not posted in quite a while as I followed what I call our failed Presidential election. I have read the fake news, the real news and wonder what news we all want to hear.

You wanted change with Trump’s election and that is surely what we are in for; but I am thinking that it is not the change most of “middle America” had in mind.  Billionaires will be running the country and do you really think they care about you?

I learned a lot with this election:

Being over sixty is an interesting point in one’s life.  You no longer care so much about what other people think of your personal opinions, nor do you care about their opinions. It is a time in life when you start to realize that in our culture maturing and growing older is not a place where much respect is given.  I have been involved in many groups, either work related or volunteering and not until this point in my life have my ideas been directly put down and not in a very nice manner.  It seems if you are older in American culture you are no longer creative in the minds of the younger generation and your ideas could no longer be considered creative.

You need to have a backbone of steel, to not be bothered by this.  I think as I gracefully age I need to put on a suit of armor to feel better about society.  It is a very different society than ten or twenty years ago.

I will close by saying I respect the editor and writers of Vanity Fair for giving us honesty in a time liars.  A sense of humor is more important now, than any time in the past.  Think about that.

Fashion Over 50

Gaudy or Good?

Iris Apfel is considered a “geriatric starlet” and a very senior fashionista at 94.  How much of a statement do we need to make as we grow older.  She has collected jewelry and clothing all her adult life and now has a collection of “couture” jewelry that has been featured at the Peabody Essex Museum, where she is considered the “Rare Bird of Fashion: The Irreverent Iris Apfel.”

When I am 94 I would love to be considered fashionable, but I do live in a small community and not New York City.  How do you take “fashion” to rural America?

For one thing, I would never be able to wear that many necklaces without a back brace. One car accident too many, by this point in my life to have that much weight suspended from my neck. On another day, we might take on the conversations we have with peers about “health issues”.  Maybe call it “Backache with Lunch”.

Looking to icons of fashion over the years, so many seem based on excess not elegant simplicity.

So where do you take this?  Do you over-stimulate your eyes in the mirror each morning or do you look for an expression less overpowering?   Or do you take some elements of style and look fashionable in slightly less exaggerated manner?

Coco Channel is stylish in a slightly less provocative manner.  So pick your style, enjoy life and love getting dressed in the morning.  “Fashion you can buy, but style you posses”. Iris tells us this.  What is your over 50 style?

Maybe in a more rural environment, we just make our overalls more stylish?

Or better yet, maybe go for stylishly simple and elegant.  Anyone can make a statement, but not everyone can make a good one.

Maybe less attention too excessive is good and elegance can return.  What do you think? What would AARP say about this?

Fashion Over 50

Aging in a Young World

Today I was reading about a young couple that had lost two babies before finally being blessed with two beautiful boys.  They write a blog about the experience at age 26 that tells of their trials and now how it is to raise their two young sons.  I think it is fabulous that they now have a family they can enjoy and was totally intrigued that they could support their family in a very nice manner by writing a blog.

It started me thinking.  By the age of (in my case – 67) 65, if you have had an interesting life at all, you have had lots of ups and downs, happinesses and sadness, challenges with defeats and hopefully more challenges with successes.   There is a growing population of maturing adults as medicine improves and we get to enjoy aging in a much healthier manner.

Why not write a blog about aging in our society? There are so many stories out there that are captivating about interesting successes of the maturing adult.  Many entrepreneurial magazines tell of the successful careers of self-starters that did not begin at a young age.  There are so many benefits of being a little older, I thought maybe it might be a fascinating venue to explore.

I will call it “STEEL” as so many of us mature folks have a little steel in our hair coloring, steel in our backbone and a few have a little steel in one or more of our limbs.  Steel will talk about daily adventures, senior discounts, commentary of being older in a young world, fun ideas for retiring, life stories we have lived through and hopefully make a difference to those of us that are “seniors” or will be soon.

Selling Books Online

I love Amazon.  I seem to always have a package coming from Amazon.

A few years ago I decided to thin out my library as I have so many books.  Some of them I still had from college and from teaching and decided someone else could better use them.

My first lesson was always have a confirmation of delivery.  The seller is “always” the liar in Amazon’s template.  I sent a $110 book with $6 or so postage to a person who complained they never received it, so I got a bad review and she or he got a free book.  That was about five years ago.  I felt if they need to lie to get a free book, then they needed it more than I did.  Not to worry.  I sold a few more books then decided it was too much work.  I got to know our local postmasters well, as I was going there about every other day.

About six months ago, I decided to list books once again and listed some 400 plus books and they started selling.  This time there was tracking for each one and a confirmation.  Well, the buyers have gotten more savvy and according to Amazon, they are always right.

This time I lost an $80 book, as the person claimed it was the wrong edition, even though I clearly had posted the one listed.  They got to keep that one for free.  Next the post office accidentally sent two books to the same address (shown on my receipt) so lost another book. Never did figure out what happened to that book. Third person received a book from my PhD classes for a mere $124.00 and they said it was missing pages.  Funny, they were all there when I sent it and when I personally used it.  Amazon awarded them the book and the money.  Another student sent a nasty note that they had received the wrong edition, saying they were way behind in class due to my mistake and in this case I did accidentally send an edition that was one earlier.  The note said they were failing the class due to my stupidity.  I let it go, knowing their stupidity was far more charming, after teaching design for eight years,  and authoring a successful design book, I know there is not that much difference in editions.  I am sad for their view of the world.

Yes, I am no longer selling on Amazon.  Too many complaints from buyers.  So if you are selling your books on Amazon:  Seller Beware!  The buyer is always telling the truth according to Amazon.

Just a commentary for today.  Any ideas where to sell these books?  I think Powell’s in Oregon buys, so will look into that, but would love other ideas.

For the last about 15 years I have been enjoying the creative pastime of painting and drawing.  Over the years I have sold many pieces and with the exception of a  doctor’s office, where I helped install the work I seldom get to see it in it’s new environment.

The second photo is of a piece I sold at Interiors of Edmonds and the new owner was kind enough to share a photo of it hanging in her lovely home.  All artists should be so lucky to see where their work finds a home.

Ya ma da poonoo = It’s bad for business

Jabba the Hutt had a lot to say in Star Wars and beyond.  The name is often used as a satirical literary device and a political caricature to underscore negative qualities.  Jabba is depicted as a large, slug-like alien, that is a cross between a toad and the Cheshire Cat exemplifying lust, greed and gluttony.  Known throughout the Star Wars universe as the “vile gangster”, amusing himself by torturing and humiliating his subjects and enemies.

The physical appearance of Jabba reinforces the personality of a criminal deviant winning the award for “The Most Disgusting Alien”.  The body is a Miasmic mass with the lardaceous body periodically releasing a greasy discharge, sending fresh waves of rotten stench into the air.  Jabba’s appetitive is insatiable and often authors portray him/her treating to eat subordinates.

Jabba the Hutt is an icon in American popular culture becoming synonymous in American Mass Media with repulsive obesity.  The name is utilized as a literary device – either as a simile or metaphor – to illustrate character flaws.

In other words, Jabba the Hutt has come to represent greed and anarchy, especially in the business world. Jabba ranked #4 on the Forbes Fictional 15 list of the wealthiest fictional characters in 2008.  Not sure where it is ranked now?  Probably grew in wealth as growing in girth.

Let’s see if by some his/her ( gender is never implicated ) quotes if you can figure it out what Jabba represents in current culture?

“You weak minded fool.”

“He is my kind of scum, fearless and inventive.”

“They will suffer for this outrage.”

“Have you now, ha ha.”

“Your mind powers will NOT work on me.”

“Let them marvel at our splendor.”

“There will be no bargain, I will enjoy watching you….(die or whatever bad)”

And my favorite:

“You will soon learn to appreciate me. ”

Jabba went on to point out: “Here, like everywhere else, laughing and singing, dancing and dreaming are not exactly the whole of reality; and for one ray of sun, shining on the hut, the rest of the village remains in the dark.”

Why write about Jabba the Hutt?

How many of you have dealt with someone with even one of these qualities in business? When reading about Jabba, is there a character that comes to mind in your life?  Someone that befriends you, only to use you to their advantage and if you do not do exactly as they want you to do it, even if they are wrong or slightly corrupt, you are chastised and attempted to be made to feel like the low life they actually are.

As I grow older in our culture, it has become highly apparent to me, that people will lie under oath, tell you what they think you want to hear and basically do anything to get ahead and win whatever is important to them.  You are of use, but not of importance to people like this.

In my way of thinking that is not a good way to go through life.  If you see that happening in your life, get out of the way and let Jabba roll right on by you.

Everyday in my home I wake up to a variation of this view.  It took a long time in life to get to the place where I wake up and can’t wait to see the view of the morning.  I kept buying and selling and then building and selling to make a profit on each so I could move to somewhere with a better view. I am in the smallest home, other than my first in Del Mar, California and I love the view the best!

Many do not understand this obsession, but living in the Pacific Northwest we have this incredible opportunity to live our lives with amazing views or using a word I heard for the first time “Fablioso” views. If you don’t live where you love the view you wake up to, then perhaps it is time to think about moving?

That is where I came in to help you find just the right view.  As an artist and a professional (ASID & IIDA) interior designer (Yes I passed the two day test) and having worked to earn a PhD in Business Marketing, I can do a great job for you!

Whenever I sell a home, the client receives a hand drawn pen and ink with a watercolor wash that I draw just for them.  It is framed and cards are made to match the drawing.  They are also welcome to use the drawing in any way to share with family and friends.
